Good Morning Banana Bread
This is a recipe that came from a former coworker of mine. She brought a banana bread into the office one day and it completely blew me out of the water. If I’m remembering correctly, the recipe came from her NYC-chef mom, and it is now one of my go-to baked goods. Everyone I’ve ever made it for comments on how delicious it is. The secret, I think, is the sour cream. I love sour cream in cake batters! It gives baked goods such a delicious texture. Here’s the recipe!
GOOD MORNING BANANA BREAD
INGREDIENTS
1/2 cup olive oil
About 1 cup of sugar (can be adjusted depending on sweetness preference)
2 eggs
1 tsp. vanilla (adjustable)
1/2 cup sour cream
1 cup mashed, decently recipe bananas (about 2 bananas)
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
Cinnamon (adjustable. I probably add about 1/2 tsp, but my friend adds 1 tbsp!)

DIRECTIONS
1. Preheat oven to 350 degrees F.
2. Using a whisk, spoon, or a mixer, cream (mix) together oil and sugar until well combined. Then add in eggs and mix well.
3. Next add in vanilla, sour cream, mashed bananas, cinnamon, and salt.
4. Then add baking soda and flour and mix slowly until completely combined.
5. Taste the batter and add more cinnamon or vanilla if needed. It should be a decently thick consistency.
6. Grease your loaf pan or muffin tin well with butter to make sure it doesn’t stick, and pour batter in.
7. Bake for at least 40 mins or until a toothpick comes out clean. (My gas oven cooks this quicker. I rarely cook mine beyond 30-35 min, so keep an eye on it so that it doesn’t overbake.) Let cool completely in the pan.
8. If you can stand to wait, wrap the pan or loaf (once cooled) overnight. It makes the banana flavor incredible.
